Eighteen ingredients are doing most of the work in this small artisanal house, and most of them have been in Archana's family for two generations or longer. Some come from a neem tree she has kept since she was a girl, picked on the morning of a batch. Some come from the same brass bowl her family has cooked with for as long as she can remember. Some travel down from a single friend in Kashmir who keeps bees in the high meadows and seals every bottle of honey with his name in pencil before it leaves his house.
